Big Mac Chaffle-Keto

This is fun to make! Reminiscent of when we were kids and our parents went through the drive thru to get a quick dinner! (we had no idea just how many chemicals and hydrogenated unhealthy fats were involved) Now you can make it with this recipe knowing you are providing all the flavors and keeping it healthy!

I make the Big Mac special sauce ahead of time so the flavors meld.

 

Chaffle:

1 large egg white

2 tsp of coconut flour

2/3 C. Shredded mozzarella cheese

1/4 tsp baking powder

1/4 tsp Lunds/Byerly’s Lemon Pepper

 

Directions for your bun. Preheat chaffle maker. 

Combine all ingredients in a measuring cup with a fork.

Spoon 1/2 of mixture into the chaffle maker, close lid and let cook for 3 min. Open and flip over if needed and cook for 1-2 min. Remove and let cool while cooking the 2nd crust.

 

For the cheeseburger:

1/3 lb ground beef seasoned with

Lemon pepper 

Grill

Top with a slice of your favorite healthy cheese just as it comes off the grill. ( I use cheddar)

 

 

Big Mac Special Sauce: Per burger

 2 tsp olive oil mayo (no sugar)

1 tsp unsweetened ketchup

Dab of yellow mustard

3 Burger dill pickle chips -chopped

(If your sauce needs to be sweetened I add a few drops of stevia)

 

You will need to build your Big Mac:

Shredded lettuce

Extra Dill pickle chips

 

I served it with low-carb vegetable chips by Terra.
