Stuffed Mini Sweet Peppers

Keto To-Go Snack

  • 14 halves of sweet mini peppers

  • 1/4 c. Shredded sharp cheddar

  • 3 oz of garlic & herb goat cheese

  • 2 roasted bacon strips cut into pieces

  • Salt & pepper to taste

 

Directions:

Cut mini sweet peppers in half lengthwise/remove seeds.

Combine shredded cheddar, garlic & herb goat cheese, and bacon pieces together with a fork.

Fill peppers with mixture.

Sprinkle with salt & pepper before baking at 400* for 7-9 min

Eat warm or cold. Great on-the-go keto snack.
