Sausage & Cauliflower Stuffing (KETO)

Don’t stop eating stuffing just because you’ve gone keto!

This is perfect for your Thanksgiving dinner or any hardy fall meal. 

Great fresh flavor and crunchiness.  

Dried Cranberries are my favorite addition. 

 

Ingredients:

1 large head of cauliflower cut into small florets

1 TBSP olive oil

Redman salt & fresh ground pepper

2 Tbsp grass fed butter

1 lb. bulk sausage (sugar free and w/o nitrates)

1/2 Tsp poultry seasoning

1 medium yellow onion

4 stalks of celery, chopped

2 cloves of garlic chopped

 

Fresh seasonings:

1 Tbsp  rosemary chopped

1 Tbsp sage chopped

2 Tsp thyme (remove leaves from stem)

1 Tbsp parsley chopped

1/4 c. dried Low sugar/ no sugar cranberries

 

 

Preheat oven to 425*

Combine cauliflower florets with olive oil, salt & pepper.

Roast or convection roast for 25 minutes.

 

While that is roasting, add butter to a pan and fry the sausage till it starts to brown.  Add chopped onion, stirring occasionally, until lightly caramelized.  Add celery and garlic sautéing until softened.

Add fresh herbs and dried cranberries and continue to sauté until softened.

Mix in the roasted cauliflower turning over until well blended. 

Serve warm.  Enjoy1

(Leftovers taste even better when the flavors have time to meld.)
