Low-Carb Banana Nut Muffins

This keto kitchen recipe is healthy and low carb. With only 4 net carbs per muffin it can be part of your keto diet or just enjoy as a healthy snack for the family. Bananas on their own are not considered keto. I have only used 1 small banana and replaced the other banana with our Pruvit Banana Protones. 

 

Preheat oven to 350*

 

Mix dry ingredients together with a mixer and set aside:

1 1/3 c. Almond flour

1/3 c. Coconut flour

1 packet of KETO//OS® PRØ™ Banana Cream

1/3 c. Golden Monkfruit

1 heaping tsp. Baking soda

1 1/2 tsp. Cinnamon

1/8 tsp Redmond salt

1/8 tsp xanthum 

 

Blend together liquid ingredients:

1 small rip banana

3 eggs

2/3 c. Coconut milk (unsweetened)

2 tsp real vanilla extract

2 TBSP of melted grass-fed butter

 

Add the dry ingredients to the liquid until blended but not over mixed.

Makes 12 Muffins or 1 loaf. 

Bake for 20-25 mins.

Cool on a cooling rack for 10 min. Ready to eat.

 

Ketone Living’s additions:

  • Adding 1/2 c chopped walnuts gives it the nutty flavor

  • 1/2 c Lily’s semi-sweet Lily’s Chocolate Chips just makes it feel like dessert without adding any sugar or extra carbs.

  • Make sure to use Muffin parchment paper or foil baking cups

  • Can be made as a Banana loaf by extending the baking time by 15 min.
