Keto Buffalo Chicken Flatbread

This Keto-friendly appetizer is perfect for the big game day festivities with your friends. Serve with a big salad or Celery sticks with blue cheese dressing for dipping. 

I love this appetizer served with our KETO UP Big Apple. (A celebration in your mouth)

Preheat oven to 375* Preheat pizza stone 

Flatbread Recipe: 

2 c. Shredded mozzarella cheese 

1 tsp Lunds/Byerlys lemon pepper seasoning

1/4 tsp Chipotle Pepper flakes

1/2 c. almond flour

 

Directions: Blend seasoning with cheese. Melt this combination on high for 60-90 secs

Kneed in almond flour. After a nice dough ball has formed cut into 4 equal parts. Roll each part out between parchment paper into a 6-8” diameter. Place the flatbread on the preheated pizza stone and bake for 5-7 min until just lightly browned.

Remove and cool. This may be done a day ahead. Store cooled flatbreads in frig in ziplock bag.

 

Ingredients for Toppings:

Buffalo sauce, shredded chicken, 1 c.  Shredded Monterey Jack cheese, 1/2 c.blue cheese crumbles, sliced green onions for garnish, extra Frank’s Red Hot sauce.

Making shredded chicken:

2 chicken breast simmered in a covered pan on low in bone broth with Lunds/Byerlys lemon pepper seasoning and 1 tsp. Chipotle flakes for approx 30 min. Set aside and cool.  Shred the chicken. Once cool, drain the broth that is left.

 

Buffalo Sauce:

4 TBSP Frank’s Red hot Sauce

3 TBSP of Regular full fat Cream cheese

Fresh ground pepper

Blend these ingredients together with a fork. Set aside.

 Preheat oven to 350*.

Assemble Toppings on Top of Flatbreads

Assemble toppings on top of the 4 flatbreads starting with the buffalo sauce, then the shredded chicken. Add the Monterey Jack cheese and then the blue cheese crumbles.  Bake the 4 flatbreads on a pizza stone (do not preheat it this time) for approx 10 min. or until the cheese has melted. Garnish with green onion slices and extra Franks Red Hot sauce. 

Each flatbread may be cut into wedges as an appetizer or served whole as a meal.

Makes 4 meal servings. Serves 6-8 people as an appetizer
